2)Add the bulk of whatever it is you want to stir-fry – the high water content veggies. In this case: cabbage, okra … Add a splash of water, then cover with a lid. Still covered, reduce heat, uncovering only to add water little by little. Allow some minutes to cook.
3)Uncover, slowly turn up heat as water evaporates. Add more delicate vegetables/herbs that need less time to cook, such as asparagus, etc. (and for example, fresh herbs which you want overall less prolonged time-exposure to heat), cover again.
