Quinoa with Veggies (Recipe)

20130117-002033.jpgHere’s a bit of a recipe for you to enjoy today :)

1) In a fry pan: rinsed/soaked quinoa, garlic and shallots, sesame oil. Add some water.20130117-002250.jpg

2)Add the bulk of whatever it is you want to stir-fry – the high water content veggies. In this case: cabbage, okra … Add a splash of water, then cover with a lid. Still covered, reduce heat, uncovering only to add water little by little. Allow some minutes to cook. 20130117-002409.jpg

3)Uncover, slowly turn up heat as water evaporates. Add more delicate vegetables/herbs that need less time to cook, such as asparagus, etc. (and for example, fresh herbs which you want overall less prolonged time-exposure to heat), cover again.20130117-002609.jpg

4) Add salt and condiments (I used Italian herb mix).20130117-002934.jpg

5)Turn down heat to low, fold quinoa upon itself, to finish the cooking, uncovered.
Quinoa is fully cooked as it starts to burst open. Turn off the heat. Finish with sesame oil.20130117-003019.jpg

6)Hand tear a bed of kale.20130117-003141.jpg

7)Plate quinoa in center of kale bowl and serve with fresh organic lemon slices.20130117-003222.jpg(add tamari if you wish, I did not)
