I made a video blog post…

I started a new video channel for Awesome Vegan Blog.

I’ll be trying to post more and more videos and start to build a presence on youtube.

This is what my life looks like when I first wake up… I usually reach for food before I even brush my teeth or put on a shirt! :p

Cornbread

Here is the recipe (approximate quantities):

2 pounds fine corn flour
1 tablespoon baking powder
1 teaspoon salt
2 teaspoon vanilla extract
3/4 pound raw organic honey
2 lbs organic carrot
One block/package silken tofu
26 oz unsweetened almond milk
1 cup of water
4/5 tablespoons organic virgin coconut oil

Mix together flour, baking powder and salt. Set aside. Blend carrots, tofu, and almond milk in food processor. Integrate honey, vanilla extract and coconut oil into wet blended mixture. Mix wet mixture into dry ingredients and add water, as necessary.

Oil a baking tin (any kind of oil) pour mixture in and bake at 375F for 40/50 minutes until top is golden-brown.

Best if allowed to set overnight before serving.

(Next time I will make this recipe soy-free: replace tofu with apple sauce. Also i will try with 2/3 corn flour and 1/3 almond flour, and less almond milk.)
