Vegan Tofu And Potatoe Burrito

Ingredients
• 8 or 9 mixed baby potatoes, cubed
• 2 medium-sized firm tofu, drained and pressed
• sprinkling of seasoning salt
• 1 tsp. ground black pepper
• 1 tsp. dried thyme
• 1 tsp. kosher salt
• 3 garlic cloves, minced
• ½ tsp. ground turmeric
• 2 tsp. ground cumin
• heaping ¼ cup nutritional yeast
• 5 frozen vegan breakfast burrito patties, thawed
• 5 burrito sized flour tortillas
• dollop of vegan mayonnaise
• 6 oz. package of vegan shredded cheese
• drizzle of olive oil
• 1/4 cup of water
• dollop of salsa
• Cilantro, chopped

Preparation

  1. Thaw the breakfast patties by removing them from the freezer.
  2. Preheat the oven to 410 degrees Fahrenheit.
  3. Peel the potatoes, then wash, dry, and cube them. Drizzle olive oil over them and spread them out equally on a rimmed baking sheet—season with one pinch of kosher salt and coarse black pepper. Stir well to coat evenly, then bake for 40 minutes at 400 degrees F, or until fork-tender.
  4. Heat two tablespoon olive oil in a wide-rimmed frying pan over medium-low heat. Sauté for a few minutes, until fragrant, with the minced garlic.
  5. Using your hands, crumble the tofu into the pan after spraying it with nonstick cooking spray. Over medium heat, sauté for about 5 minutes.
  6. In a small bowl, mix the cumin through and through, including the water. Cook for another 10 minutes with the tofu, scraping off any parts that stick to the pan with a metal spatula.
  7. Finally, add the nutritional yeast.
  8. Transfer the tofu to a serving bowl once it’s done.
  9. Place the breakfast patties in the frying pan and break them up with a metal spatula into small pieces. Cook the patties for 6-8 minutes over medium heat or until browned.
  10. If desired, return the tofu to the pan to warm and mix.
  11. Microwave the tortillas for about 30 seconds to warm them up.
  12. To construct, start with a dollop of mayo in the centre of the tortilla, then a pile of potatoes, some breakfast burger and tofu scramble, a smidgeon of cheese, salsa, and cilantro. Fold the left and right edges in first, then roll the burrito away from you! If desired, serve with more salsa on the side.
